The sizing of watercolor paper can be seen as a kind of starch that’s mixed into the pulp and, on finer papers, also applied to the surface. The sizing prevents water and paint from being absorbed too quickly, keeping them on the surface where you want them. In the past, gelatin was used as the sizing agent, but today it is sometimes synthetic or plant-based.
